This hearty recipe combines Wunderbrødchen Protein rolls with aromatic roasted vegetables and creamy herbed quark. Perfect as a light lunch or a satisfying snack.

Ingredients (2 servings)

  • 2 freshly baked Wunderbrødchen Protein

  • 1 small zucchini

  • 1 bell pepper

  • 1 small red onion

  • 2 tbsp olive oil

  • 1 tsp dried Mediterranean herbs (e.g., oregano or thyme)

  • Salt and pepper

For the herb quark:

  • 150 g quark or plant-based alternative

  • 1 tbsp lemon juice

  • 1 tbsp chopped herbs (e.g., parsley or chives)

  • Salt and pepper

Preperation

  1. Cut the zucchini, bell pepper, and onion into small pieces.

  2. Toss the vegetables with olive oil, herbs, salt, and pepper, then spread them out on a baking sheet.
