From nut to mush - with finesse

Clasen relies on experience and sensitivity: in a particularly gentle process, the cashews are not simply crushed, but ground at high speed. This creates the velvety, soft texture - without adding any oil, as the valuable cashew oil naturally remains in the mush. The result is a creamy treat that is perfect for spreading - and surprises with its spicy flavour.

Preparation

As a spread Spread pure on bread or toasted sourdough bread - ideal for a quick, savoury breakfast or as a snack.

To refine Stir into dressings, dips or marinades - provides a pleasant depth and nutty flavour.

For hot dishes Stir into pasta sauces, curries or vegetable stir-fries - add after cooking to retain the full flavour.

As a base For creamy vegan sauces or spreads, stir in a little water or plant-based milk until smooth.

For dipping Serve with vegetable sticks or crackers - as a nutty alternative to hummus or classic dips.

Recipe idea: Pasta with cashew pepper cream & roasted vegetables

Ingredients (for 2 portions):

  • 200 g pasta (e.g. fusilli or linguine)

  • 2 tbsp Muus to chooze salt & pepper

  • 1 small courgette

  • 1 pepper (red or yellow)

  • 1 small onion

  • 1 clove of garlic

  • 1 tsp lemon juice

  • Fresh parsley or basil to garnish

  1. Dice the courgette and paprika, finely chop the onion and garlic. Fry in a pan with a little olive oil for approx. 5-7 minutes until everything is golden brown.

  2. Meanwhile, cook the pasta according to the packet instructions until al dente. Save about 100 ml of the pasta water.

  3. Mix the Muus to chooze Salt & Pepper with the lemon juice and some of the pasta water until smooth and you have a creamy sauce.

  4. Mix the pasta, vegetables and cashew cream in the pan. If necessary, add a little more pasta water until everything is nice and creamy.

  5. Top with freshly chopped parsley or basil and serve warm.
