Preparation

As a spread Use the cedar nut mush as a delicious, nutty spread on your favourite bread, rolls or toast. Ideal for a hearty breakfast or a healthy snack between meals.

In sauces & dips Refine sauces, dressings or dips with a spoonful of cedar nut mush for a creamy consistency and a fine, nutty flavour. Perfect for salads, vegetables or for dipping fresh bread.

In desserts Use the mush as a base for luxurious desserts such as creams, toppings for porridge, or stir it into yoghurt and quark. It gives your sweet creations a special, natural flavour.

For cedar nut milk Mix the cedar nut mush with water to create a delicious plant-based cedar nut milk. Ideal for smoothies, for cooking or as a base for vegan coffee specialities.

As a porridge topping Sprinkle the mush over your warm porridge or muesli and enjoy the nutty flavour as the perfect finish to your breakfast.

Recipe idea: Fresh lamb's lettuce with cedar nut mush dressing

Ingredients:

  • 100 g lamb's lettuce

  • 1 small handful of walnuts (optional, for extra crunch)

  • 1 tsp cedar nut mush

  • 1 tbsp apple cider vinegar or lemon juice

  • 2 tbsp olive oil

  • 1 tsp honey or maple syrup (optional, depending on flavour)

  • Salt and pepper to taste

  1. Wash the lamb's lettuce thoroughly and shake well. Place in a large bowl.

  2. (Optional) Roughly chop the walnuts and sprinkle them over the salad for extra crunch and flavour. If you don't like walnuts, you can also use other nuts such as cashews or almonds.

  3. In a small bowl, combine the cedar nut mush, apple cider vinegar (or lemon juice), olive oil and honey/maple syrup. Beat everything with a small whisk or fork to make a creamy dressing. Flavour with salt and pepper.

  4. Pour the dressing evenly over the salad and mix everything carefully. If you like an even more intense flavour, leave the salad to infuse for about 10 minutes so that the flavours combine well.
