Preparation

For salads:

Refine Mediterranean salads with a pinch of organic Mediterranean seasoning. It goes particularly well with ingredients such as feta cheese, olives, tomatoes, cucumber and fresh herbs. Mix it with olive oil and balsamic vinegar for a simple but aromatic dressing.

For marinating:

The spice is ideal for marinades. Mix it with olive oil, lemon juice and a little garlic to marinate meat, fish or tofu. Chicken, salmon and vegetables in particular benefit from the Mediterranean mixture.

For cooking:

Refine sauces, pasta or rice dishes with a small amount of the spice. The Mediterranean herbs and spices harmonize perfectly with tomato sauces, risotto and vegetable curries.

For baking:

Use the spice to refine cookies or savory pastries. A touch of the mixture in the dough gives an interesting, spicy note and goes particularly well with savory snacks.

Mediterranean salad with feta, olives & crusty bread

Ingredients (for 2-3 portions):

  • 200 g feta, diced or crumbled

  • 1 bunch of cherry tomatoes, halved

  • ½ cucumber, sliced

  • 100 g olives

  • 1 small red onion, in rings

  • 1 small baguette or ciabatta, diced

  • 2-3 tbsp olive oil

  • 1-2 tsp Mediterranean spice & 1 tsp oregano

  • 1-2 tbsp balsamic vinegar

  • salt, pepper, basil

  1. Toast the bread - drizzle with olive oil & bake at 180 °C for approx. 10 mins.

  2. Prepare the vegetables & feta - chop everything & place in a bowl.

  3. Mix the dressing - whisk together the olive oil, balsamic, spices, salt & pepper.

  4. Mix everything together, fold in the dressing & garnish with basil.

  5. Add the bread cubes last to keep them crispy.

Mediterranean focaccia with herbs & garlic

Ingredients:

  • 500 g flour (type 550)

  • 1 sachet of dry yeast (7 g)

  • 1 teaspoon sugar, 1 teaspoon salt

  • 300 ml lukewarm water

  • 3 tbsp olive oil + more for brushing

  • 2 tsp organic Mediterranean spice, 1 tsp oregano

  • 1-2 cloves of garlic, finely chopped

  • Fresh rosemary & salt flakes (optional)

  1. Prepare the dough: Place the flour in a bowl, make a well, stir in the yeast, sugar & water. Leave to rest for 10 mins.

  2. Knead & leave to rise: Add the salt, oil & spices, knead for 10 mins., then cover and leave to rest for 1 hr.

  3. Shape the focaccia: Flatten on a baking tray & make indentations with your fingers.

  4. Seasoning: Brush with olive oil, sprinkle with garlic, spices & salt flakes.

  5. Bake: Bake at 200 °C for approx. 20-25 mins until golden brown.

  6. Serve: Leave to cool briefly, cut into pieces & enjoy!
